Delicious Tresillian Truffles
Truffles are one of the rarest and most valuable cooking ingredients available on the market. The characteristic that makes Tresillian Truffles so desirable and precious is that they are grown under pine trees, hazel nuts and oak trees in a spray free environment on the Canterbury Plains of New Zealand. Artesian well water is used to irrigate the sandy loam soil of the truffiere.
Our truffles are light ochre in colour, with a globular shape and have a very intense and penetrating perfume of that of the onion family mixed with the earthy sweet tones of the mushroom.
Tips For Cooking
Here are some top tips for cooking with our white bianchetto (tuber borchii) truffles:
- They should not be heated over 40 degrees as it destroys the aroma and flavour of the truffle. Here at Tresillian Truffles we predominantly shave white truffle over meat, soup, sauces, risotto and pasta. The heat of the dish itself is enough to stimulate the flavour and aroma of the truffle to immerse through the dish.
- Most root vegetables pair exceptionally well with Bianchetto (Tuber Borchii) truffles, like potato, celeriac, parsnip. Other vegetables like cauliflower also partner well with truffle. Try cauliflower and celeriac soup served with freshly grated truffle.
- We recommend infusing dairy products like cheese and butter with the truffle for 24 hours before eating. This is easily achieved by placing the fresh truffle alongside the dairy products in the refrigerator in a sealed container. Soft cheeses work well for this. Freshly infused cheese placed on oatmeal crackers with a fine shaving of truffle on top creates an extremely tasty canapé.
- Rice Risotto with white truffle is a classic dish. Simply make your favourite rice risotto dish and just prior to plating shave the fresh white truffle over the top. You may choose to fold the truffle into the dish as this intensifies the flavour. So simple, so easy, you cannot muck it up.
- Surprise those at home with white truffle mashed potatoes, simply prepare your potatoes like normal add a good dollop of butter, whip until smooth then fold in grated white truffle prior to plating.
