So you have a prized Bianchetto White Truffle in your hands, now what? How do you clean, store and preserve your truffle. What is the best way to introduce truffles in to your recipes for amazing flavour? Here we share all the basics of looking after and cooking with truffles.
Cleaning
Fifteen minutes before using the truffle place the truffle under cold water and use a soft brush to remove any remaining dirt. Then place the truffle on a paper towel and gently pat dry.
Storage
Truffles should be stored in the fridge at around 3-6 degrees wrapped in a paper towel and stored in an airtight glass container. Once a truffle is harvested, consume as soon as possible ideally within seven days of harvesting.
Truffles are subject to a slight weight loss because truffles respire after being harvested.
Bianchetto truffles in the Kitchen
We recommend as using the bianchetto truffle as a finishing product as cooking the truffle over 30 degrees will remove the aroma from the truffle.

Infusing is a great method used to enhance to truffle flavour in any dish. We recommend taking the lid off the truffle jar and place items that you would like to infuse in a larger sealed container in the fridge with the truffle for 24 hours. We recommend infusing eggs, butter, and your favourite cheeses.
